"tastes like french onion" cauliflower soup
I have to apologize. This is an "oldie but goodie" post from a meal I created a year ago. It's a simple soup with a cauliflower base, but the result was insanely delicious: sweet, umami, earthy, complex, and strangely cheesy (although it contained no cheese). The end result tasted very much like French onion soup with the requisite mozzarella top.
Of course, I never wrote down the recipe, but here's my best guess at the ingredients anyway:
- caramelized onions
- garlic
- rosemary
- potato
- cauliflower
- better than bouillon vegetable base
- water
- salt
- pepper
- good quality crusty bread
- nutritional yeast?
- mustard?
You can serve it without the bread, of course. But in my opinion you'd miss out on a key element of the experience. A chunk of good quality crusty bread really rounds out this meal, adds a "cheesiness" in texture and flavor, and not to mention it sops up the umami broth really nicely. Yum!
