"tastes like french onion" cauliflower soup
I have to apologize. This is an "oldie but goodie" post from a meal I created a year ago. It's a simple soup with a cauliflower base, but the result was insanely delicious: sweet, umami, earthy, complex, and strangely cheesy (although it contained no cheese). The end result tasted very much like French onion soup with the requisite mozzarella top. Of course, I never wrote down the recipe, but here's my best guess at the ingredients anyway: caramelized onions garlic rosemary potato cauliflower better than bouillon vegetable base water salt pepper good quality crusty bread nutritional yeast? mustard? You can serve it without the bread, of course. But in my opinion you'd miss out on a key element of the experience. A chunk of good quality crusty bread really rounds out this meal, adds a "cheesiness" in texture and flavor, and not to mention it sops up the umami broth really nicely. Yum!
